450 g (1 lb) mangoes, peeled, stoned and sliced
3 tablespoons maple syrup
finely grated zest and juice of 1 lime
600 ml (20 fl oz) low fat plain yogurt
1. Place the sliced mangoes in a food processor with the maple syrup, lime zest and juice and yogurt.
2. Blend for about 30 seconds, until the mixture is smooth.
3. Transfer the mixture to a freezer container with a tight fitting lid and freeze for 2 hours. Remove from the freezer and whisk well to break down the ice crystals. Freeze for another hour, and then whisk again.
4. Repeat this two or three times more before the mixture freezes completely.
